Preparation of Green curry paste
spices
- 24 Shallots
- 240 ml Coriander leaves
- 160 ml Galangal
- 160 ml Ginger
- 160 ml Turmeric
- 32 cloves Garlic
- 8 tsp Coriander seeds
- 8 tsp Peppercorns
- 8 tsp Cumin
- 32 leaves Mint
- 8 Lemongrass
- 24 Kaffir lime leaves
Finely chop 24 Shallots, 32 cloves Garlic, 160 ml Galangal, 160 ml Ginger, 160 ml Turmeric, 8 Lemongrass, 32 leaves Mint, 24 Kaffir lime leaves and 240 ml Coriander leaves.
Crush 8 tsp Coriander seeds, 8 tsp Peppercorns and 8 tsp Cumin in a mortar and pestle.

- 4 Lime
- 48 Green chili peppers
Deseed 48 Green chili peppers and chop finely too.
Grate the zest from 4 Lime and squeeze the lime.

Crush the paste with a hand blender.
Pour into a jar and store in a cool place.
