Green curry paste

Ingredients for 20 persons: 1.2 L Oil, 60 Shallots, 600 ml Coriander leaves, 400 ml Galangal, 400 ml Ginger, 400 ml Turmeric, 10 Lime, 80 cloves Garlic, 80 ml Coriander seeds, 80 ml Peppercorns, 80 ml Cumin, 80 ml Salt, 80 leaves Mint, 20 Lemongrass, 60 Kaffir lime leaves, 120 Green chili peppers

Preparation of Green curry paste

spices

Finely chop 60 Shallots, 80 cloves Garlic, 400 ml Galangal, 400 ml Ginger, 400 ml Turmeric, 20 Lemongrass, 80 leaves Mint, 60 Kaffir lime leaves and 600 ml Coriander leaves. Crush 80 ml Coriander seeds, 80 ml Peppercorns and 80 ml Cumin in a mortar and pestle.

chilli & lime

Deseed 120 Green chili peppers and chop finely too. Grate the zest from 10 Lime and squeeze the lime.

mix

Mix the spices, chillies, lime zest and juice, 80 ml Salt and 1.2 L Oil well and leave to rest for 10 minutes.

Crush the paste with a hand blender. Pour into a jar and store in a cool place.

use

Used for marinating meat.
