Ingredients: Green curry paste for 6 persons

Ingredients: 360 ml Oil, 18 Shallots, 180 ml Coriander leaves, 120 ml Galangal, 120 ml Ginger, 120 ml Turmeric, 3 Lime, 24 cloves Garlic, 6 tsp Coriander seeds, 6 tsp Peppercorns, 6 tsp Cumin, 6 tsp Salt, 24 leaves Mint, 6 Lemongrass, 18 Kaffir lime leaves, 36 Green chili peppers

Preparation of Green curry paste

spices

Finely chop 18 Shallots, 24 cloves Garlic, 120 ml Galangal, 120 ml Ginger, 120 ml Turmeric, 6 Lemongrass, 24 leaves Mint, 18 Kaffir lime leaves and 180 ml Coriander leaves. Crush 6 tsp Coriander seeds, 6 tsp Peppercorns and 6 tsp Cumin in a mortar and pestle.

chilli & lime

Deseed 36 Green chili peppers and chop finely too. Grate the zest from 3 Lime and squeeze the lime.

mix

Mix the spices, chillies, lime zest and juice, 6 tsp Salt and 360 ml Oil well and leave to rest for 10 minutes.

Crush the paste with a hand blender. Pour into a jar and store in a cool place.

use

Used for marinating meat.
