Preparation of Green curry paste
spices
- 150 Shallots
- 1.5 L Coriander leaves
- 1 L Galangal
- 1 L Ginger
- 1 L Turmeric
- 200 cloves Garlic
- 200 ml Coriander seeds
- 200 ml Peppercorns
- 200 ml Cumin
- 200 leaves Mint
- 50 Lemongrass
- 150 Kaffir lime leaves
Finely chop 150 Shallots, 200 cloves Garlic, 1 L Galangal, 1 L Ginger, 1 L Turmeric, 50 Lemongrass, 200 leaves Mint, 150 Kaffir lime leaves and 1.5 L Coriander leaves.
Crush 200 ml Coriander seeds, 200 ml Peppercorns and 200 ml Cumin in a mortar and pestle.

- 25 Lime
- 300 Green chili peppers
Deseed 300 Green chili peppers and chop finely too.
Grate the zest from 25 Lime and squeeze the lime.

Crush the paste with a hand blender.
Pour into a jar and store in a cool place.
