Green curry paste

Ingredients for 40 persons: 2.4 L Oil, 120 Shallots, 1.2 L Coriander leaves, 800 ml Galangal, 800 ml Ginger, 800 ml Turmeric, 20 Lime, 160 cloves Garlic, 160 ml Coriander seeds, 160 ml Peppercorns, 160 ml Cumin, 160 ml Salt, 160 leaves Mint, 40 Lemongrass, 120 Kaffir lime leaves, 240 Green chili peppers

Preparation of Green curry paste

spices

Finely chop 120 Shallots, 160 cloves Garlic, 800 ml Galangal, 800 ml Ginger, 800 ml Turmeric, 40 Lemongrass, 160 leaves Mint, 120 Kaffir lime leaves and 1.2 L Coriander leaves. Crush 160 ml Coriander seeds, 160 ml Peppercorns and 160 ml Cumin in a mortar and pestle.

chilli & lime

Deseed 240 Green chili peppers and chop finely too. Grate the zest from 20 Lime and squeeze the lime.

mix

Mix the spices, chillies, lime zest and juice, 160 ml Salt and 2.4 L Oil well and leave to rest for 10 minutes.

Crush the paste with a hand blender. Pour into a jar and store in a cool place.

use

Used for marinating meat.
