Preparation of Green curry paste
spices
- 120 Shallots
- 1.2 L Coriander leaves
- 800 ml Galangal
- 800 ml Ginger
- 800 ml Turmeric
- 160 cloves Garlic
- 160 ml Coriander seeds
- 160 ml Peppercorns
- 160 ml Cumin
- 160 leaves Mint
- 40 Lemongrass
- 120 Kaffir lime leaves
Finely chop 120 Shallots, 160 cloves Garlic, 800 ml Galangal, 800 ml Ginger, 800 ml Turmeric, 40 Lemongrass, 160 leaves Mint, 120 Kaffir lime leaves and 1.2 L Coriander leaves.
Crush 160 ml Coriander seeds, 160 ml Peppercorns and 160 ml Cumin in a mortar and pestle.

- 20 Lime
- 240 Green chili peppers
Deseed 240 Green chili peppers and chop finely too.
Grate the zest from 20 Lime and squeeze the lime.

Crush the paste with a hand blender.
Pour into a jar and store in a cool place.
