Ingredients for 4 persons: 400 g Parsnips, 150 ml Whipping cream, 1 tbsp Cornstarch, 1 tsp Curry powder, 1 Chili, 2 Bay leaves, ½ Cinnamon stick, Cinnamon powder, Parsnip

Preparation of Parsnip curry

Parsnips

Peel and roughly dice 40 dag Parsnips.

Sauce & Spices

Place 600 ml Soup with 1 tsp Curry powder, 1 chopped Chili, 2 Bay leaves and ½ Cinnamon stick (or a little Cinnamon powder in a pan and simmer gently with the Parsnip for 15 minutes.

Bind sauce

Mix 1 tbsp Cornstarch with cold water and stir into the sauce with 150 ml Whipping cream. Bring to the boil once and serve with rice.

Parsnip curry variations

If this is too many parsnips for you, you can also replace some of the parsnips with carrots or add mushrooms or tofu.
