Preparation of Gnocchi

Potatoes

1 kg floury potatoes Cook until soft. Peel and finely press with a potato press.

Gnocchi dough

Quickly mix 250 g Flour (preferably firm to the touch) and 2 eggs with the hot potato mixture using a wooden spoon to form a smooth dough. Season with Salt.

Shaping gnocchi

Flour the work surface. Shape the dough into 2 cm thick rolls in portions. Divide the rolls into 2 cm long pieces using a pastry card. Flatten the gnocchi slightly with a fork.

Cooking gnocchi

  • Salted water
Gently simmer the gnocchi in plenty of Salted water until they float to the surface (a few minutes). Remove with a sieve scoop and drain. Serve the gnocchi simply with butter and Parmesan cheese or with tomato sauce.
