Preparation of Baked potato noodles

Potato dough

1 kg floury potatoes boil or steam until soft. Peel and finely press with a potato press. Knead the potatoes with 20 dag Flour, 5 dag Semolina, 4 dag Butter, 2 Egg yolk and Salt into a smooth dough.

Shape noodles

Shape the dough in portions into 5 cm thick rolls. Divide these into evenly sized pieces using a pastry card. Shape the pieces into noodles with both hands.

Bake

Place the potato noodles in an ovenproof dish and top with 10 dag chopped Butter. Bake in the oven at 200°C for approx. 20-30 minutes.
