Green curry paste

Ingredients for 30 persons: 1.8 L Oil, 90 Shallots, 900 ml Coriander leaves, 600 ml Galangal, 600 ml Ginger, 600 ml Turmeric, 15 Lime, 120 cloves Garlic, 120 ml Coriander seeds, 120 ml Peppercorns, 120 ml Cumin, 120 ml Salt, 120 leaves Mint, 30 Lemongrass, 90 Kaffir lime leaves, 180 Green chili peppers

Preparation of Green curry paste

spices

Finely chop 90 Shallots, 120 cloves Garlic, 600 ml Galangal, 600 ml Ginger, 600 ml Turmeric, 30 Lemongrass, 120 leaves Mint, 90 Kaffir lime leaves and 900 ml Coriander leaves. Crush 120 ml Coriander seeds, 120 ml Peppercorns and 120 ml Cumin in a mortar and pestle.

chilli & lime

Deseed 180 Green chili peppers and chop finely too. Grate the zest from 15 Lime and squeeze the lime.

mix

Mix the spices, chillies, lime zest and juice, 120 ml Salt and 1.8 L Oil well and leave to rest for 10 minutes.

pass

Crush the paste with a hand blender. Pour into a jar and store in a cool place.

use

Used for marinating meat.
