Preparation of Green curry paste
spices
- 90 Shallots
- 900 ml Coriander leaves
- 600 ml Galangal
- 600 ml Ginger
- 600 ml Turmeric
- 120 cloves Garlic
- 120 ml Coriander seeds
- 120 ml Peppercorns
- 120 ml Cumin
- 120 leaves Mint
- 30 Lemongrass
- 90 Kaffir lime leaves
Finely chop 90 Shallots, 120 cloves Garlic, 600 ml Galangal, 600 ml Ginger, 600 ml Turmeric, 30 Lemongrass, 120 leaves Mint, 90 Kaffir lime leaves and 900 ml Coriander leaves.
Crush 120 ml Coriander seeds, 120 ml Peppercorns and 120 ml Cumin in a mortar and pestle.

- 15 Lime
- 180 Green chili peppers
Deseed 180 Green chili peppers and chop finely too.
Grate the zest from 15 Lime and squeeze the lime.

Crush the paste with a hand blender.
Pour into a jar and store in a cool place.
