Preparation of Green curry paste
spices
- 12 Shallots
- 120 ml Coriander leaves
- 8 tbsp Galangal
- 8 tbsp Ginger
- 8 tbsp Turmeric
- 16 cloves Garlic
- 4 tsp Coriander seeds
- 4 tsp Peppercorns
- 4 tsp Cumin
- 16 leaves Mint
- 4 Lemongrass
- 12 Kaffir lime leaves
Finely chop 12 Shallots, 16 cloves Garlic, 8 tbsp Galangal, 8 tbsp Ginger, 8 tbsp Turmeric, 4 Lemongrass, 16 leaves Mint, 12 Kaffir lime leaves and 120 ml Coriander leaves.
Crush 4 tsp Coriander seeds, 4 tsp Peppercorns and 4 tsp Cumin in a mortar and pestle.

- 2 Lime
- 24 Green chili peppers
Deseed 24 Green chili peppers and chop finely too.
Grate the zest from 2 Lime and squeeze the lime.

Crush the paste with a hand blender.
Pour into a jar and store in a cool place.
