Preparation of Green curry paste
spices
- 30 Shallots
- 300 ml Coriander leaves
- 200 ml Galangal
- 200 ml Ginger
- 200 ml Turmeric
- 40 cloves Garlic
- 40 ml Coriander seeds
- 40 ml Peppercorns
- 40 ml Cumin
- 40 leaves Mint
- 10 Lemongrass
- 30 Kaffir lime leaves
Finely chop 30 Shallots, 40 cloves Garlic, 200 ml Galangal, 200 ml Ginger, 200 ml Turmeric, 10 Lemongrass, 40 leaves Mint, 30 Kaffir lime leaves and 300 ml Coriander leaves.
Crush 40 ml Coriander seeds, 40 ml Peppercorns and 40 ml Cumin in a mortar and pestle.

- 5 Lime
- 60 Green chili peppers
Deseed 60 Green chili peppers and chop finely too.
Grate the zest from 5 Lime and squeeze the lime.

Crush the paste with a hand blender.
Pour into a jar and store in a cool place.
