Ingredients for 4 persons: 250 g Rhubarb, 2.5 eggs, 125 g Curd cheese, 125 g Flour, 115 g Baking sugar, 85 g Butter, 50 g Sugar, Lemon, 1 tbsp Sour cream, ½ packages Baking powder, Vanilla sugar, Salt, Rum, Raisins, Rhubarb

Preparation of Rhubarb - curd cheese cake

Beat 8.5 dag Butter, 8.5 dag Baking sugar, a pinch of Salt, 1 pkg of Vanilla sugar, the grated zest of one Lemon and the yolks of 2.5 eggs until very frothy. Add 12.5 dag Curd cheese, 1 tbsp Sour cream, Raisins soaked in Rum, 12.5 dag Flour smooth and ½ packages Baking powder. Whisk with 3 dag Baking sugar and fold in the egg whites.

Briefly overcook 25 dag Rhubarb with Water and 5 dag Sugar.

Spread the mixture onto a greased baking tray and top with Rhubarb. Bake in a preheated oven at 175 °C for about half an hour.
