Preparation of Raspberry syrup
Prepare the elderberries
- 2.8 kg Elderberries
Harvest 2.8 kg Elderberries together with the cones (2.8 kg corresponds to about a full 10 L bucket).
Carefully wash the elderberries, discarding the leaves and unripe berries.
Separate the berries from the stalks with a fork.
2.8 kg of elderberries + stalks make 2.5 kg of elderberries.
Pressing elderberries
Place the elderberries in portions of about 1 kg in a cloth towel and squeeze out the juice.
2.5 kg of elderberries make about 2 liters of pure elderberry juice.
Cook syrup
- 2 kg Sugar
- 50 g Citric acid
Boil the pressed juice with 2 kg Sugar and 50 g Citric acid and keep at a temperature of at least 80 °C for 20 minutes (reason for the heat retention time: see Wikipedia article on black elderberry and Sambunigrin).
Bottling
Boil the screw caps of the bottles for 15 minutes.
Rinse the bottles with boiling water.
Pour the hot syrup into the bottles and seal immediately.
