Preparation of Strawberry syrup

Strawberries

Wash 2 kg Strawberries and remove the leaves. Puree together with ½ L Water using a hand blender or stand mixer.

Sugar & Cooking

Strain the strawberries through a sieve into a large pan. Add 50 g Citric acid and 2 kg Sugar to the juice. Bring the juice to the boil. Caution: foams strongly. Skim off the foam and discard. Cook gently for 10-15 minutes.

Pasteurized berries

Pour the cooked juice into hot rinsed screw-top bottles. Do not close the screw-top bottles completely. Pasteurize in the oven in a water bath at 160°C. After bubbles appear, wait ten minutes and then remove the bottles from the oven.
