Ingredients for 4 persons: 200 g Radish leaves, 2 Radish, 60 ml Whipping cream, ½ Onion, 2 Egg yolk, 30 g Butter

Preparation of Radish leaf soup

Radish leaves

200 g Radish leaves wash. You get approx. 100 g of radish leaves per standard bunch.

Cooking

½ Onion finely chop. Sweat the onion in 30 g Butter. Infuse with 750 ml Soup. Add the radish leaves. Save a few leaves for the garnish. Bring the soup to the boil and simmer briefly. Finely puree the radish leaf soup with a hand blender or in a blender. Pass through a sieve.

Alloying

Whisk 2 Egg yolk and 60 ml Whipping cream together. Remove the soup from the heat. Stir in some of the soup. Then stir this mixture into the rest of the soup. Then reheat the radish soup while stirring, but do not boil again.

Serve

Cut 2 Radish into slices. Serve the radish blue butter soup with the radish slices and leaves.
