Preparation of Cream of pumpkin soup

Pumpkin & onion

Wash 1 Pumpkin, cut in half and remove the seeds. The pumpkin should weigh 500g / piece, preferably use a hokkadoo pumpkin. Roughly dice the pumpkin halves. Roughly dice 1 Onion.

Roast

Heat 4 tbsp Oil in a saucepan. Fry the diced pumpkin and chopped onions for a few minutes.

Cooking

Infuse the pumpkin soup with 750 ml Water. Cover and simmer for 15 minutes. Season with Salt. Puree finely with a hand blender. Refine the pumpkin cream soup with 100 ml Whipping cream.

Serve

  • Pumpkin seed oil, Whipping cream
Serve the pumpkin cream soup garnished with Pumpkin seed oil or Whipping cream.
