Preparation of Cream of pumpkin soup
Pumpkin & onion
Roast
- 4 tbsp Oil
Heat 4 tbsp Oil in a saucepan.
Fry the diced pumpkin and chopped onions for a few minutes.
Cooking
- 750 ml Water
- 100 ml Whipping cream
- Salt
Infuse the pumpkin soup with 750 ml Water.
Cover and simmer for 15 minutes.
Season with Salt.
Puree finely with a hand blender.
Refine the pumpkin cream soup with 100 ml Whipping cream.
Serve
- Pumpkin seed oil, Whipping cream
Serve the pumpkin cream soup garnished with Pumpkin seed oil or Whipping cream.
