Ingredients: Cream of parsnip soup for 6 persons

Ingredients: 300 g Parsnips, 200 g potatoes, 1 Onion, 100 ml Whipping cream, 3 tbsp Oil, Salt

Preparation of Cream of parsnip soup

Cutting vegetables

Roughly dice 30 dag Parsnips, 20 dag potatoes and 1 Onion.

Roasting and cooking

Sauté the vegetables in 3 tbsp Oil and continue to fry for a few minutes while stirring. Deglaze with 1.5 L Water or soup, season with Salt and pepper and simmer gently for approx. 30 minutes.

Puree

Add 100 ml Whipping cream to the soup and puree finely with a hand blender.
