Preparation of Chicken soup
Meat
Separate the legs and wings from 1 Chicken.
(I don't use a soup chicken but - because of the finer taste - a standard chicken) Cut out the fillet.
The fillet and upper leg meat should be used for other dishes.
Place the legs, wings, carcass and offal in a pan.
Deliver with 4 L cold Water.
Clarify
Bring the water to the boil.
Important: the water must only ever simmer gently, never boil.
Strain the rising foam several times using a sieve or scoop.
This takes about 30 - 45 minutes.
Roast onion
- 2 Onions
In the meantime, fry the onion.
Halve 2 Onions (with the skin) at the equator and roast in a pan without fat until brown.
Deglaze with water and set aside.
Vegetables and spices
- 4 Carrots
- ½ Celery
- 2 Root parsley
- 3 slices Ginger
- 2 tbsp Mustard seeds
- 1 tbsp Peppercorns
- 1 tbsp Allspice berries
- 2 Bay leaves
- 2 Star anise
When no more foam forms, add the vegetables, herbs and spices.
Add ½ Celery, 4 Carrots, 2 Root parsley and the onion (with the water) to the soup.
Also 2 Bay leaves, 2 tbsp Mustard seeds, 1 tbsp Peppercorns, 1 tbsp Allspice berries, 2 Star anise and 3 slices Ginger[Simmering.
Strain & season
- 1 tbsp Salt
Remove the vegetables and meat.
Strain the soup, discard the herbs and spices.
Remove the chicken meat from the bones.
Season the soup with 1 tbsp Salt.
Serve
- Chives
Cut the vegetables into small pieces.
Serve the chicken soup with the vegetables, meat and side dish of your choice and garnish with 1 bunch of chopped Chives.
