Preparation of Potato soup
Cutting vegetables
Roast vegetables
- 50 ml Oil
Sauté the onion and garlic in 50 ml Oil until translucent.
Add the rest of the vegetables and fry for a few minutes while stirring.
Deglazing & cooking
- 750 ml Water
- Salt, Caraway
Deglaze with 750 ml Water and season with Salt and Caraway.
Cover the potato soup and simmer on a low heat for approx. 30 minutes.
Bind
- 50 ml Whipping cream
- Soup
Remove 2 ladles of the soup and puree with a hand blender.
Add back to Soup together with 50 ml Whipping cream and bring to the boil again.
