Ingredients: 3 Carrots, 3 Root parsley, 2 Onions, ¼ Celery, ½ Leek, 2 tbsp Oil, 1 tbsp Mustard seeds, 1 tbsp Peppercorns, 2 tsp Salt, Parsley, 5 Juniper berries, 2 Bay leaves, Lovage

Preparation of Clear vegetable soup

Vegetables

Peel 3 Carrots, 3 Root parsley and ¼ Celery. Wash ½ Leek, 2 Onions and etwas Parsley. Leave the skin on the onions and cut the onions crosswise once.

Spices

Prepare 1 tbsp Mustard seeds, 1 tbsp Peppercorns, 5 Juniper berries, 2 Bay leaves and etwas Lovage.

Water

Put the vegetables and spices in a pan with 2 L Water. Bring to the boil and simmer gently for 1.5 hours.

Finish

Strain the Soup, season with 2 tsp Salt and refine with 2 tbsp Oil.
