Ingredients for 4 persons: 2 Carrots, ¼ Celery, 1 Onion, 50 ml Whipping cream, 3 tbsp Oil, 2 tbsp Flour, Salt

Preparation of Cream of vegetable soup

Preparations

Roughly dice 1 Onion, 2 Carrots and ¼ Celery. Depending on the season, add other vegetables such as asparagus, zucchini or pumpkin.

Sauté

Heat 3 tbsp Oil in a saucepan. Sauté the vegetables in it for a few minutes. Dust with 2 tbsp Flour, stir in and roast briefly.

Cooking

Pour in 1.5 L Water and simmer for 30 minutes. After half the cooking time, season with Salt. Add 50 ml Whipping cream. Remove from the heat and puree with a hand blender. Pass through a sieve if necessary.

Serving

Serve with a dollop of cream and fresh herbs.
