Ingredients: 750 g beet, 150 g Sour cream, 1 Onion, 4 tbsp Sour cream, 3 tbsp Oil

Preparation of Beet soup

Beet

750 g beet Steam or boil until soft. Peel and cut into small cubes. Save a quarter of the cubes for the soup garnish.

Soup

Finely chop 1 Onion and sauté with the rest of the beet cubes in 3 tbsp Oil. Pour in 1 L Soup and simmer for 10 minutes. Puree with a hand blender. Stir in 15 dag Sour cream. Then do not bring the soup back to the boil, just heat it up again.

Serve

Garnish the soup with the beet cubes and 4 tbsp Sour cream.
