Preparation of Beet soup
Beet
- 750 g beet
750 g beet Steam or boil until soft.
Peel and cut into small cubes.
Save a quarter of the cubes for the soup garnish.
Soup
- 1 L Soup
- 15 dag Sour cream
- 1 Onion
- 3 tbsp Oil
Finely chop 1 Onion and sauté with the rest of the beet cubes in 3 tbsp Oil.
Pour in 1 L Soup and simmer for 10 minutes.
Puree with a hand blender.
Stir in 15 dag Sour cream.
Then do not bring the soup back to the boil, just heat it up again.
Serve
- 4 tbsp Sour cream
Garnish the soup with the beet cubes and 4 tbsp Sour cream.
