Preparation of Cream of celery soup

Celery

Cut ¼ Celery and 2 potatoes into cubes. 1 Onion coarsely chop. Sweat the onion in 50 ml Oil until translucent. Add the celery and fry until lightly browned.

Dusting & deglazing

Add 2 tbsp Flour to the vegetables, fry briefly and pour in 750 ml Soup or water. Stir in well, season with Salt and Caraway. Simmer for 30 minutes.

Strain soup

Puree the cream of celery soup with a hand blender and pass through a sieve. Add 100 ml Whipping cream to the soup and bring to the boil again. Garnish with black bread cubes.
