Ingredients for 8 persons: 400 g Lentils, 400 ml Coconut milk, 2 Carrots, 2 Onions, 2 tbsp Kokosöl, Coriander, Caraway, Salt, Pepper

Preparation of Lentil-Coconut soup

Vegetables

Coarsely grate 2 Carrots and finely dice 2 Onions. Sauté the vegetables in 2 tbsp Kokosöl and fry for a few minutes. Finely mortar Coriander and Caraway and fry briefly.

Deglaze and cook

Deglaze with 1.5 L Water and pour in 400 ml Coconut milk. Add 400 g yellow Lentils and simmer everything over a low heat for approx. 20 minutes. At the end of the cooking time, season with Salt and Pepper to taste. Depending on the desired consistency, continue cooking or add Water if the soup is too thick.
