Preparation of Cream of asparagus soup
Roast
- 3 tbsp Clarified butter
- 2 tbsp Flour
Fry the asparagus and onion in 3 tbsp Clarified butter for a few minutes.
Dust with 2 tbsp Flour and briefly roast the flour with it.
Cooking
- 1 L Water
Delete with 1 L Water.
Stir well and simmer gently for 40 minutes.
Refine
- 100 ml Whipping cream
Puree the soup with a hand blender and pass through a sieve.
Refine with 100 ml Whipping cream.
Serve with cooked asparagus tips.
