Ingredients for 4 persons: 400 g Asparagus, 1 Onion, 100 ml Whipping cream, 3 tbsp Clarified butter, 2 tbsp Flour

Preparation of Cream of asparagus soup

Preparations

Cut 40 dag Asparagus into pieces, roughly chop 1 Onion.

Roast

Fry the asparagus and onion in 3 tbsp Clarified butter for a few minutes. Dust with 2 tbsp Flour and briefly roast the flour with it.

Cooking

Delete with 1 L Water. Stir well and simmer gently for 40 minutes.

Refine

Puree the soup with a hand blender and pass through a sieve. Refine with 100 ml Whipping cream. Serve with cooked asparagus tips.
