Ingredients for 50 persons: 7.5 kg Onions, 7.5 kg Pork belly, 500 g Clarified butter, 500 g Paprika powder, 250 ml Marjoram, 125 ml Vinegar, 25 cloves Garlic, 50 ml Caraway, Salt, Pepper

Preparation of Pork goulash

Preparations

Cut 750 dag Onions into strips, roughly dice 750 dag Pork belly (or pork shoulder).

Fry the goulash meat

Fry the onions in 500 g Clarified butter until lightly browned. Add the meat. It should only be cooked on the outside.

Deglazing

Add 500 g Paprika powder, fry briefly and deglaze with 125 ml Vinegar and 6.25 L Water. Depending on the desired spiciness, use a portion of hot paprika powder.

Seasoning and cooking

Season the pork goulash with 25 cloves Garlic, Salt, Pepper, 250 ml Marjoram and 50 ml Caraway. Simmer over a low heat for about 2 hours.
