Ingredients for 20 persons: 3 kg Onions, 3 kg Pork belly, 200 g Clarified butter, 200 g Paprika powder, 100 ml Marjoram, 5 tbsp Vinegar, 10 cloves Garlic, 5 tsp Caraway, Salt, Pepper

Preparation of Pork goulash

Preparations

Cut 300 dag Onions into strips, roughly dice 300 dag Pork belly (or pork shoulder).

Fry the goulash meat

Fry the onions in 200 g Clarified butter until lightly browned. Add the meat. It should only be cooked on the outside.

Deglazing

Add 200 g Paprika powder, fry briefly and deglaze with 5 tbsp Vinegar and 2.5 L Water. Depending on the desired spiciness, use a portion of hot paprika powder.

Seasoning and cooking

Season the pork goulash with 10 cloves Garlic, Salt, Pepper, 100 ml Marjoram and 5 tsp Caraway. Simmer over a low heat for about 2 hours.
