Preparation of Melanzani polenta casserole

Polenta

Boil up 500 ml Water with 1 tsp Salt. Stir in 10 dag Corn grits (fine). Bring to the boil once. Then cover and leave to soak at the lowest setting (switch off the hob if using an electric stove) for approx. 20 minutes, stirring several times.

Melanzani

Cut 2 Melanzani into 5 mm thick slices. Salt both sides and place on kitchen roll to remove the moisture. Dab off after 15 minutes.

Casserole

  • Parsley, Chives
Spread two thirds of the polenta into an ovenproof dish. Layer the eggplants on top and season with Parsley and Chives. Spread the rest of the polenta over the eggplants.

Bake

Bake the casserole in the oven at 180 °C for 30 - 40 minutes.
