Preparation of Stuffed Melanzani
Melanzani
Place 4 Melanzani in the oven at 200 °C and heat for approx. 15 minutes, turning once.
Remove and peel off the skin.
Cut the eggplants in half lengthways and hollow them out, leaving a rim approx. 2 cm wide.
Cut the pulp into small pieces.
Prepare the filling
Cooking the filling
Heat 4 tbsp Oil in a pan.
Fry the onion and garlic until golden brown.
Add the tomatoes, season with Salt, Bay leaf and 1 stick Cinnamon.
Cook the filling for a few minutes while stirring.
Finally, add the flesh of the eggplant, the almonds and the parsley.
Remove the bay leaf and cinnamon again.
Bake
- Rice
Fill the hollowed-out eggplants with the filling and bake in the oven at 180 °C for 20 minutes.
Serve with grainy Rice or fresh flatbread.
