Ingredients for 4 persons: 600 g potatoes, Oil, 100 g Sliced almonds, 100 g Bread crumbs, 1 Egg, 2 Egg yolk, 20 g Butter, Salt, Flour

Preparation of Almond balls

Earth apple pastry

60 dag potatoes Peel, halve and cook or steam until done. Press the potatoes with a potato press. Process with 2 Egg yolk, 20 g Butter and Salt to an earthen apple dough.

Shape the almond balls

Shape the earth apple dough into approx. 3 cm balls.

Breading croquettes

Roughly chop 10 dag Sliced almonds and mix with 10 dag Bread crumbs. Coat the almond balls in Flour, 1 Egg (whisked) and in the almond and breadcrumb mixture. Bake in hot Oil1 until golden brown. Drain on kitchen paper after frying.
