Preparation of Spaghetti Bolognese
Ragù alla bolognese
- 50 dag Minced meat
- 2 sticks Celery stalks
- 2 Onions
- 1 Carrot
- 50 ml Olive oil
- 4 cloves Garlic
Cut 1 Carrot, 2 sticks Celery stalks, 2 Onions and 4 cloves Garlic into fine cubes.
Sauté the vegetables in 50 ml Olive oil.
Add 50 dag Minced meat (beef or beef & pork mixed) and fry until the water has evaporated.
Deglaze the Bolognese
- 250 ml Red wine
- 200 ml Strained tomatoes
- 2 tbsp Tomato paste
- Salt, Oregano, Thyme
Add 2 tbsp Tomato paste to the ragù, fry briefly and deglaze with 250 ml Red wine.
Reduce the red wine by half while stirring.
Add 200 ml Strained tomatoes and season with Salt, Oregano and Thyme.
Cooking
Spaghetti
- 40 dag Spaghetti
- Salted water, Parmesan
Cook 40 dag Spaghetti in Salted water until al dente.
Serve with the ragù and grated Parmesan.
