Preparation of Sachertorte

Dough

Melt 20 dag Cooking chocolate in a bain-marie and leave to cool to room temperature. Stir 20 dag Butter with 6 Egg yolk, 10 dag Sugar and the liquid chocolate until frothy. Beat 6 Egg white and 10 dag Sugar until stiff. Mix 30 dag Flour and 1 package Baking powder. Fold 250 ml Milk, flour and snow alternately into the yolk mixture.

Baking

Pour the batter into a 26 cm springform pan and bake for approx. 1 hour at 180 °C. After baking, remove the cake from the tin, turn out and leave to cool.

Jam

Cut the cooled Sachertorte in half once. Fill with 10 dag Apricot jam, assemble and apricotize the outside with 10 dag hotter Apricot jam.

Glaze

Melt 20 dag Cooking chocolate with 150 ml Whipping cream in a water bath while stirring. Allow the glaze to cool to room temperature. Cover the Sacher cake with the chocolate icing.
