Preparation of Black Forest gateau
Chocolate biscuit
- 6 eggs
- 12 dag Butter
- 12 dag Sugar
- 12 dag Flour
- 10 dag Cooking chocolate
- 1 package Vanilla sugar
- Prise Salt
Disconnect 6 eggs.
10 dag Cooking chocolate melt.
Bring 12 dag Butter to room temperature and stir with 6 dag Sugar until frothy.
Stir in the chocolate and egg yolks.
Beat the egg whites with 6 dag Sugar, 1 package Vanilla sugar and Prise Salt until stiff.
Fold the snow into the butter-chocolate mixture.
Carefully fold in 12 dag Flour.
Bake sponge cake
Pour the dough into a greased and floured cake tin (26 cm).
Bake at 180 C for approx. 20 minutes.
Remove the sponge cake from the tin and leave to cool.
Cut the sponge cake in half into two slices.
Place the first biscuit slice back into the mold.
Parisian cream
- 15 dag Cooking chocolate
- 150 ml Whipping cream
15 dag Cooking chocolate cut small.
Bring 150 ml Whipping cream to the boil, add the chocolate pieces.
Cook briefly while stirring.
Set to cold.
Stir the cooled Parisian cream until frothy.
Sour cherry pudding
- 400 g Sour cherry compote
- Vanilla pudding
Strain 400 g Sour cherry compote (from pitted sour cherries).
Prepare a pudding from the compote juice with Vanilla pudding.
Adjust the amount of custard powder to the amount of juice.
Save 12 sour cherries for the decoration.
Add the remaining sour cherries to the hot pudding.
Allow to cool.
Pudding cream
- 300 ml Whipping cream
- ½ packages Pudding powder
- ¼ L Milk
- Water
Prepare a pudding from ½ packages Pudding powder and ¼ L Milk (according to package instructions).
Stir a few times during cooling.
Beat the pudding with a mixer until frothy.
Beat 300 ml Whipping cream.
Soak cold Water.
Squeeze out the soft gelatine leaves and dissolve in 2 tablespoons of hot kirsch.
Stir the dissolved gelatine into the pudding very quickly and fold in the whipped cream.
First filling
- 15 dag Cherry jam
Spread 15 dag Cherry jam on the first biscuit slice and top with the Parisian cream.
Place the second biscuit slice on top and chill.
Second filling
Place a 10 cm high strip of baking paper between the sponge and the cake ring.
Spread the sour cherry pudding on the second slice of sponge cake.
Spread the custard over the sour cherry pudding.
Set to cold.
Decorate
- 250 ml Whipping cream
- 50 g Cooking chocolate
When the custard is firm, the baking paper ring and ring mold can be removed.
Beat 250 ml Whipping cream until stiff.
Spread the top and sides of the cake with some of the whipped cream.
Scrape or plane chips from 50 g Cooking chocolate with a knife.
Sprinkle the top and sides of the cake with the chocolate shavings.
Using a piping bag and a piping nozzle, pipe rosettes of the remaining whipped cream onto the edge of the Black Forest gateau.
Place sour cherries on each of the rosettes.
