Preparation of Pineapple coconut muffins
Pineapple
- 250 g Pineapple
Finely dice 250 g Pineapple (fresh or canned).
Stir muffin batter
- 200 g Sour cream
- 20 dag Flour
- 13 dag Sugar
- 90 ml Oil
- 80 g Coconut flakes
- 1 Egg
- 1 package Vanilla sugar
- 2 tsp Baking powder
- Yogurt
Mix 1 Egg, 13 dag Sugar, 90 ml Oil, 200 g Sour cream (or Yogurt and 1 package Vanilla sugar well.
Stir in the pineapple pieces.
Mix 20 dag Flour with 2 tsp Baking powder and 80 g Coconut flakes and stir into the batter.
Bake muffins
Place the paper cases in a muffin tray and pour the batter into the cases.
Bake the pineapple coconut muffins in the oven at 200°C for approx. 25 minutes.
