Preparation of Herb sauce
Onion roux
- 250 ml Soup
- 2 Onions
- 50 g Butter
- 50 ml White wine
- 2 tbsp Flour
Finely chop 2 Onions and sauté in 50 g Butter until translucent.
Dust with 2 tbsp Flour and stir in quickly.
Fry the flour briefly.
Deglaze the sauce with 50 ml White wine and pour in 250 ml Soup.
Seasoning & Cooking
- ½ bunches Parsley
- 100 ml Whipping cream
- Salt, Garlic, Herbs
Season the herb sauce with Salt and Garlic.
Simmer for 10 minutes.
Infuse with 100 ml Whipping cream.
Finely chop ½ bunches Parsley or other Herbs and stir into the hot sauce, but do not boil any more.

Sauté the onion in the butter and dust with flour
Mix the flour well, deglaze with wine and pour in the soup.
Season the sauce with salt and garlic. Simmer for 10 minutes.
Refine the herb sauce with whipped cream and chopped herbs.
