Preparation of Cherry compote (long-life)
Prepare the cherries
- 1 kg Cherries
Wash 1 kg Cherries and remove the stalks.
Fill into jars
Pour the cherries into clean Screw-top jars, preserving jars or similar jars.
Add 8 tsp Sugar (1 teaspoon per glass) to the cherries.
Add approx. 1 L Water to the cherries so that they are covered.
The amount of water can vary.

Seal with rubber bands + lids + clips.
Preserving
Place the sealed cherry compote in a bain-marie in a deep tray or pan.
About half a liter of water is sufficient for the water bath.
The cherry compote is then preserved at 180 °C hot air for about half an hour.
Bubbles should rise inside.
Don't worry, air can also escape from the screw-top jars because the lids bulge outwards.
Cool down
As soon as the bubbles appear, remove the jars with the cherry compote from the bain-marie (be careful: hot!) and leave to cool.
The screw caps should be pulled inwards slightly when cooling down.
If preserving jars are used, the lid must hold firmly after cooling without clamps.
