Preparation of Peach compote (long-life)

Cutting peaches

2 kg Peaches Peel and cut into wedges. Remove the core. Peeling can also be omitted depending on taste and degree of ripeness.

Fill into jars

Fill the peaches into clean Screw-top jars, preserving jars or similar jars. Add Ca 1 L Water to the peaches so that they are covered. The amount of water can vary. The jars with the screw-on lids or. Seal with rubber bands + lids + clips.

Preserving

Place the sealed peach compote in a water bath in a deep tray or roasting pan. About half a liter of water is sufficient for the water bath. The peach compote is then heated at 180 °C for about half an hour. Bubbles should rise inside. Don't worry, air can also escape from the screw-top jars if the lids bulge outwards.

Cool down

Remove the jars with the peach compote from the bain-marie (be careful: hot!) and leave to cool. The screw caps should then be pulled inwards slightly. If preserving jars are used, the lid must hold firmly after cooling without clamps.
