Preparation of Peach tamisu

Peaches

Blanch ½ kg Peaches in boiling water and rinse in cold water. Peel off the skin and cut into thin slices. There is no need to blanch ripe vineyard peaches as they are easy to peel. Alternatively, you can also use canned peaches.

Mascarpone cream

Disconnect 2 eggs. Beat the egg whites with 10 g Sugar until stiff. Beat the egg yolks with 20 g Sugar until frothy and gradually stir in 25 dag Mascarpone. Continue stirring to form a light yellow mass.

Peach tiramisu layers

60 Biscotti, layer the peach slices and the mascarpone cream alternately in a dish. Start with the sponge cakes and finish with the cream. Briefly dip the sponge fingers in cold Coffee or Peach juice. Chill the peach tiramisu in the fridge for several hours.

Serve the peach tamisu

Toast 50 g planed Almonds in a pan without fat over a medium heat until light brown and sprinkle over the tiramisu. Serve in portions.
