Yeast dumplings

Ingredients for 40 persons: 5 kg Flour, 2.5 L Milk, 1.4 kg Butter, 1.4 kg Powdered sugar, 1 kg Powidl, 900 g Poppy seeds, 40 Egg yolk, 420 g Yeast, 10 packages Vanilla sugar, 40 ml Salt

Preparation of Yeast dumplings

starter dough

Dissolve 420 g Yeast in 2.5 L Milk (lukewarm), mix with 1 kg Flour, cover and leave to rest in a warm place for 30 minutes.

butter drift

Beat 50 dag Butter with 40 Egg yolk, 500 g Powdered sugar, 10 packages Vanilla sugar and 40 ml Salt until frothy.

dough

Knead the butter scrapings with the starter dough and 4 kg Flour to form a smooth dough. Divide into 12 pieces, shape into balls, cover the balls with a damp cloth and leave to rest in a warm place for 30 minutes.

fill

Press the balls flat, place 1 kg Powidl on top and shape the balls. (if the dumplings do not stick together, moisten with a little water).

cook

Cook in lightly salted water for 8 minutes, turn and cook for a further 8 minutes.

serve

Melt 900 g Butter, pour onto the dumplings and sprinkle with 900 g Powdered sugar and 900 g Poppy seeds.
