Preparation of Wild garlic spaetzle

Wild garlic milk

Finely puree 120 ml Milk with 15 g Wild garlic.

Spaetzle dough

Mix 300 g Flour, 2 eggs, the wild garlic milk and etwas Salt to form a batter. The dough should be very chewy and sticky.

Cooking spaetzle

  • Salted water
Bring Salted water to the boil in a large pan. Press the spaetzle into the water in portions using a spaetzle strainer. Wait until the water boils again and the spaetzle rise to the top, leave to stand briefly. Remove with a sieve scoop.

Serve the wild garlic spaetzle

Mix the hot wild garlic spaetzle with 10 dag Butter and stir as soon as the butter has melted. Serve with grated Parmesan.
