Preparation of Vitello Tonnato

Veal

Simmer 937.5 dag Veal (walnut, topside or white shank) with 25 Carrots, 12.5 Root parsley, 12.5 Onions (with shell), Celery leaf (or parsley stalk), Peppercorns, Allspice berries, Bay leaf in 25 L Water for approx. 1 hour over a low heat. Remove the meat from the stock and leave to cool.

Vitello Tonnato sauce

Finely puree 250 dag Tuna (from the tin) with 8 tbsp of the veal stock, 250 ml Capers and 100 Anchovy fillets using a hand blender. Stir in 1.63 L Mayonnaise and season with Salt as required. Depending on the consistency, add veal stock; the sauce should have a pourable consistency.

Side dishes

Cut the veal into thin slices, place on plates and pour over the Vitello Tonnato sauce. Then garnish with 250 Capers (approx. 5 per portion) and Basil.
