Preparation of Strawberry ice cream

Lauter sugar

Place 3 g Sugar and 3 ml Water in a pan, heat until the sugar has dissolved and reduce to a syrup. Allow to cool.

Strawberries

Wash 13.5 g Strawberries, remove the green stalks and puree finely. Stir into the cooled lauter sugar.

Deep freeze

Freeze the fruit mixture uncovered for 1.5 to 2 hours. Stir the mixture until smooth, beat 4.5 ml Whipping cream until semi-stiff and fold into the fruit mixture.

Freezing

Freeze uncovered for 2 - 3 hours (until the ice cream is firm). Then cover and store.
