Preparation of Spring rolls

Cabbage

Cut 0.13 White cabbage into fine strips.

Dough

Mix 62.5 g Flour, 125 ml Water, ½ tbsp Oil and ½ Egg white to form a dough. Grease a non-stick frying pan a little and bake thin flat cakes from the dough. Bake on one side only and very lightly so that the flatbreads do not become too firm.

Filling

Cut ½ Onion into strips, grate ½ Carrot. Fry Onion and Carrot in a pan with ¾ tbsp Clarified butter until translucent and add the cabbage to the pan. Season with 1.5 tbsp Rice wine, 1 tbsp Soy sauce and Pepper. Stir well and cook for a few more minutes.

Filling spring rolls

Place the filling in the middle of the pastry cases, leaving about 3 cm free on the right and left, fold in on one side, coat with a flour paste (mix flour + a little water until smooth), fold the other side over it. Coat the side edges with the flour dough as well and fold in.

Baking

Fry the spring rolls in plenty of oil or fat until golden brown.
