Preparation of Spinach and carrot strudel
vegetables
- 300 dag Spinach
- 20 Carrots
- 10 Yellow carrots
- 1 kg Celery
- 10 Onions
Blanch 300 dag Spinach briefly in boiling salted water. Rinse in cold water and squeeze lightly. (blanching is not necessary with frozen spinach) Coarsely grate 20 Carrots, 10 Yellow carrots and 1 kg Celery. Finely dice 10 Onions.

- 100 dag Curd cheese
- 100 dag Frischkäse
- 300 ml Clarified butter
- Salt, Soup powder
Sweat the onion in 300 ml Clarified butter until translucent. Add the rest of the vegetables. Fry for a few minutes. Deglaze with a little water. Season with Salt and Soup powder. Cover and simmer for 10 minutes. Leave to cool. Stir in 100 dag Curd cheese and 100 dag Frischkäse.

- 10 Puff pastry
- 10 eggs
Roll out 10 Puff pastry to the size of a baking tray. Place the filling in the middle. Then fold in one side. Whisk 10 eggs. Brush the folded strudel dough with it. Fold in the second half and also brush with the egg. Brush the edges on the long side with egg and fold inwards slightly.
