Preparation of Spinach and carrot strudel
vegetables
- 30 dag Spinach
- 2 Carrots
- 1 Yellow carrot
- 100 g Celery
- 1 Onion
Blanch 30 dag Spinach briefly in boiling salted water. Rinse in cold water and squeeze lightly. (blanching is not necessary with frozen spinach) Coarsely grate 2 Carrots, 1 Yellow carrot and 100 g Celery. Finely dice 1 Onion.

- 10 dag Curd cheese
- 10 dag Frischkäse
- 3 tbsp Clarified butter
- Salt, Soup powder
Sweat the onion in 3 tbsp Clarified butter until translucent. Add the rest of the vegetables. Fry for a few minutes. Deglaze with a little water. Season with Salt and Soup powder. Cover and simmer for 10 minutes. Leave to cool. Stir in 10 dag Curd cheese and 10 dag Frischkäse.
strudel
- 1 Puff pastry
- 1 Egg
Roll out 1 Puff pastry to the size of a baking tray. Place the filling in the middle. Then fold in one side. Whisk 1 Egg. Brush the folded strudel dough with it. Fold in the second half and also brush with the egg. Brush the edges on the long side with egg and fold inwards slightly.
