Ingredients: Shrimp cocktail for 30 persons

Ingredients: 3 kg Shrimps, 15 apples, 600 ml Ketchup, 750 ml Mayonnaise, 7.5 Lemons, 375 g Peas, 150 ml Vinegar, 7.5 tsp Cognac, 7.5 tsp Horseradish, 30 leaves Salad, Pepper

Preparation of Shrimp cocktail

Shrimps

Marinate 3 kg Shrimps with the juice from 7.5 Lemons. If using raw shrimps (recognizable by their blue color), boil them briefly in salted water. When buying shrimps, you should pay attention to their origin for ecological reasons. I recommend wild-caught shrimps. If you want to be on the safe side, you can use native crayfish, but they are harder to come by.

Cocktail sauce

Slowly stir 600 ml Water and 150 ml Vinegar into 750 ml Mayonnaise. Stir in 600 ml Ketchup. Add 7.5 tsp Cognac, 7.5 tsp Horseradish and Pepper. Stir until smooth.

Vegetables & apple

Cut 15 apples into small cubes. Wash 30 leaves Salad and cut into strips. 375 g Peas defrost.

Serving

First arrange the salad, then the apples and peas and finally the shrimps on plates or in bowls. Pour over the cocktail sauce.
