Ingredients for 40 persons: 5 L Milk, 1.3 kg Semolina, 10 eggs, 300 g Sugar, 200 ml Raspberry syrup, 100 g Butter, 5 packages Vanilla sugar, 40 ml Lemon zest, Salt

Preparation of Semolina flummery

Boil up 5 L Milk with Prise Salt, 5 packages Vanilla sugar and 40 ml Lemon zest.

Stir in 1.3 kg Semolina and simmer while stirring until the porridge thickens.

finish

Melt 100 g Butter, whisk with 10 eggs and stir quickly into the porridge together with 300 g Sugar. Pour into cold-rinsed molds and chill.

serve

Dip the mold briefly in hot water, turn out the semolina flummery and drizzle with 200 ml Raspberry syrup.
