Ingredients: Quiche for 50 persons

Ingredients: 50 eggs, 2.5 kg Mushrooms, 2.3 kg Flour, 10 Leek, 2 kg Crème fraîche, 1.5 kg Butter, 1 kg Pork belly, 1 kg Ham, 100 ml Oil, Salt, Butter, Flour, Pepper, Nutmeg

Preparation of Quiche

shortcrust pastry

Crumble 230 dag Flour and etwas Salt with 150 dag Butter. Knead in 10 eggs. Cover and leave to rest in the fridge for 30 minutes.

Cut 10 Leek into strips. 100 dag Pork belly roll the dice. 250 dag Mushrooms eighth. Heat 100 ml Oil in a pan. Fry the spcek first, then the leek and mushrooms. Stir-fry until the mushrooms collapse. Cut 100 dag Ham into strips.

Roll out the shortcrust pastry thinly. Grease a springform pan (26 cm) with Butter and dust with Flour. Line these with the pastry (base and sides). Place the ham and filling on top. Stir 2 kg Crème fraîche and 40 eggs until smooth, season with Salt, Pepper and Nutmeg and pour over the top.

Bake in the oven at 200 °C for about an hour.
