Preparation of Potato dumplings with spinach

Potatoes

6.67 kg potatoes cooking.

Filling

Defrost 1.33 kg Spinach (or blanch fresh spinach leaves). Allow to cool and mix with 1.33 kg Ricotta.

Dough

Pressing the potatoes. Season with Salt, Pepper and Nutmeg and process together with 13.33 eggs, 200 dag Flour and 66.67 dag Semolina to form a dough.

Fill dumplings

Shape the dough into a roll and divide into 12 pieces. Form a slice from each piece, place approx. 1 tbsp of filling on top and seal.

Bake

Grease a baking dish with 133.33 ml Butter. Insert the pockets. Whisk 13.33 eggs and coat the dumplings with it. Bake in the oven at 200 °C for approx. 30.
