Preparation of Potato croquettes

Potato dough

15 dag potatoes Peel, halve and cook or steam until done. Press the potatoes with a potato press. Process with ½ Egg yolk, 5 g Butter and Salt to an earthen apple dough.

Shaping croquettes

Use a piping bag without a nozzle to form approx. 2 cm thick rolls from the earth apple dough on a bed of breadcrumbs. Cut the rolls into 8 cm long pieces.

Breading croquettes

Coat the potato croquettes in Flour, ¼ Egg (whisked) and 2.5 dag Bread crumbs. Fry in 75 ml hot Oil1 on both sides until golden brown. Drain on kitchen paper after frying.
